Love bombers try to create a narrative to justify their inappropriate level of interest. They say things like "I've never felt this way about anyone before" and try to make you feel like their soulmate even though you barely know each other. They're so convinced of your specialness that they are willing to jump into a love affair immediately. But again, they don't really know you... they're just trying to feed the high of a whirlwind romance and trying to suck you in. They can be very charismatic and convincing, and for a lot of people, it can be fun and thrilling to get swept up in it. The problem is, it's not sustainable, because it's based off a fantasy, a whim, not reality. Love bombing works a little differently in established relationships but for people you're vetting in the dating scene that's what you should look out for.

Genuine healthy interest is much more restrained. Feelings escalate appropriately as you get to know each other and establish deeper levels of compatibility. Boundaries are respected during this process. They're genuinely curious about you and want to know more about you, but they're not trying to force anything, either.
