She probably disabled reading notifications, you can do it and she doesn't show online, ever.
You also could read a message in airplane mode and it wouldn't show as read, but I suppose they had this one fixed.

You should invite for another date. Whatever is happening and for whatever reason it might be happening, you're not going to build rapport through messaging her further if there's no interactivity (and it's usually hard to do even when there is interactivity. I suppose only sexting a bit is worth a damn).
Cash in the attraction you have and see where it'll take you.

I favor calling over texting for setting dates at any time. I think it shows more confidence. I've been told by more than one chick that's it's "too pressuring" and "intimidating" but at first I still insist on calling first.
