This on you. This is obviously a complicated situation if she is your housemate, landlord and boss but if you're recovering from an addiction, where and how does she step in to help you? Does she step in as a landlord? As a friend? If you are going to quit, as an employee you do not need to tell her why but as a human who is trying not to be an ass, you should tell her (especially as a friend). If you owe rent, you are living on her, in which case, you could ATLEAST be humane enough to give her an explanation for one of the three issues... She even said that if you couldn't afford it, she would work something out.

She may be intrusive but you are making your situation worse, she wants to talk because you are obviously struggling. Be civil, it seems like she is only trying to help you despite the awkward position you are both in.

This is not a PPD, this is a concerned landlord with you taping her and not responding. Then she says you're a month and a half late on your rent. Pay your bills, douchebag.
