Humiliate her. Loudly point out that you are 100% not attracted to her, do NOT welcome her aggressive advances and that she is embarrassing herself and behaving without dignity. Loudly point out that if sexes were reversed, she’d have been thrown out and banned a long time ago.

Where I am, female servers are told it's expected and are punished or fired for letting it affect their work (like if they point it out or ask to switch with another server). So in your case, where the topic of being groped is seen as a lesser violation, I'm not quite sure HOW it should be approached. Personally, I would start with the manager/supervisor, and if it's not resolved by them find a better place of employment. I know that's not an option for everyone, but it's the best one I can think of... whatever you do, I would love an update!

It seems clear to me that you're a customer at this bar, but I'm not clear on whether this woman is employed there, or is a customer. The issue is not whether you're "into" her or not, the issue is that you have a right not to be touched without your consent.

If she's an employee, then the management has a duty to enforce their code of conduct. So tell her directly that if she touches you again, then you'll tell her manager. Don't murmur it, say it loud enough for other people to overhear.

If she's another customer, then the bar has less legal control over her. It sounds like you've already spoken to her about it, and you're not getting anywhere. You say you have witnesses, and it sounds like they're willing to get involved and back you up. Check what they're willing to do, so you don't suddenly have the ground cut out from under you.

Then think things over, and do a cost-benefit analysis. You might decide that you're not willing to make a fuss, and you'd prefer simply to go drink in another bar. That's fine. It's not "letting her win," it's picking your battles, and it's your choice. People who try to make that choice for you, whatever they claim to be, are not your friends.

If you decide to pursue this matter, then gather your friends and go talk to the manager(s). Do it in public, so that the management's response is public.

Don't go nuclear and threaten them with court action from the get-go. Your intention is what they call "graduated response."

Your leverage is that this bar is a business and it wants your money. Obviously it would like to get money from both you, your friends and this woman, but you're going to take this option off the table. At the very least they're going to lose your custom. They will also be aware that because you're doing this in public that the other guys drinking there will be thinking "this could be me." If it comes down to banning her, or losing custom from other guys, likely they'll do the math and she's history.

If they don't, then make the decision about whether you're going to take it further then. Again, it's your choice.

In an other context, i had a woman often brushing to me in corridors, Getting to work station where we had common stuff while i was still using them.

Then i took the habit of handing her her stuff before she even came close to the workstation, and avoiding said workstation when she was here.

I say if it's legal in your area get some evidence, a recording of her sexually assaulting you, or at least written documentation from you witnesses. Bypass the company and get a restraining order out on her. She comes back after that, you can have the the police take care of the situation if your workplace won't after your meeting.

A woman wouldn't be expected to tolerate sexual assault because a man was drunk, neither should you.
