PC garbage. The height difference between men and women is 2 standard deviations. Only 2.5% of women are as tall or taller than the average man and only 2.5% of men are as short or shorter than the average woman. While there is overlap between below average men and above average woman you can safely assume that the vast majority of 5'10" individuals are men and the vast majority of 5'4" individuals are women.

1 in 6 men are 6ft tall or taller
1 in 587 women are 6ft tall or taller
If you guessed a 6ft tall individual was a man, you would be right 97.8% of the time. That's pretty damn accurate.
The only time you can't accurately predict the gender based on height is when the individual is about 5'6"-5'8", because that's where the male and female heights overlap.
Not only you are using an extreme outlier, but you are using an outlier with a genetic disorder.
There are people with Down's syndrome that have an IQ within the normal population range (90-110). That doesn't mean that it's wrong to assume any particular individual with Down's syndrome has an intellectual disability.

If you had to bet money on it, what would you bet on?
Your strawman is laughable. Criminals are a very small subset of the population. If you limit your sample to the criminal population, then it's definitely not wrong to make statistical generalizations.
If the criminal population is 1% and 50% of them are black, that means that 95% of blacks and 99% of whites don't commit crimes. While it is statistically significant, the difference is orders of magnitude smaller than the 2 standard deviations of difference in the average height between men and women.
