I can't tell if you're telling us you're on the road, living out of hotel rooms and the like, but I've worked IT (desks, leaning forward, peering into screens) for really long hours on faraway deploys-
If I couldn't find a gym, I literally transported the P90X syllabus with me (including videos) so I could pull workouts at random.
My only pointer then consists of: don't neglect your modern access to working out things, which doesn't stop at having a hard drive with videos on it, but can include Youtube for entire workout series. You should be able to find some combination of routines to burn fat and keep defined, even if you can't necessarily access weights in a proper gym.

Check out bodyweightfitness reddit. Even though I can easily have access to a gym, and have enough time to excercise, I choose this route. Because it feels more natural as opposed to lifting weights on perfectly flat surfaces.
