If you wanna meet her, tell her:
"Come meet me at x, at time y".
If you don't, ignore her. contact her when you want to see her.

Couple options:
“Yes why..”
“Doing x, you”
“Let’s meet up”

"Doing x, you" is dropping frame, cause it's giving in to what she's asking and ignoring her rudeness
"Lets meet up" is ignoring her rudeness, giving it a pass, and rewarding it with attention
"Yes why..." -- that's not bad

“Doing x, you” is ignoring her why statement. So is “let’s meet up”. It’s just going back to the original “what are you doing” question and not letting that dumb “you respond with why” test phase you. I could be wrong but I don’t see it as a big deal.
True. But she's complaining about my response, so it seems answering it 'better', would be giving in.
I think of it like a dog response:
Her: Sit!
Me: BARK!
Her: I said sit!
Me: [Sits]
You know what I mean?

Yeah I see what you mean. I don’t think I’d react to that kinda response but if you want to stick with your guns, do it. Just hit her with yes why.

"Yes, I did."
"Because I want to know."
"Why you ask why I ask why?
Or, my personal favorite: nothing.
