If she believes you are exclusive, regardless of what you have agreed to, that is what SHE believes. She will hamster this to what suits her however (If you maintain frame, hamster might lead to "Well we weren't technically exclusive". If you are going to do something that your plate, LTR or whatever would consider cheating, then you better be ready to hold frame in the face of it or just next them.

When the commitment talk comes up a couple of times, you are now looking at (simplified) 3 options.
1. You drag it out for a little longer by ignoring it.
2. You accept the commitment and LTR them.
3. You face her, tell her that isn't happening, and she either accepts or goes.

The fact that you referred to her here as GF, then went on to mention you "didn't want to define ourselves" suggests to me that you are having a hard time sticking to one option. You've accepted some level of commitment, but want to act like you didn't. That means you've broken your frame and she is now confused. This will likely cause her to start pushing your frame more and more (because she's seeing the falseness of it) and you will deal with more and more shit.

Either;
You have a rock-solid frame, true abundance, and such a high SMV that she simply can't let you go. or,
You are dragging out a complicated and frustrating plate/LTR that is already blowing up and you should next her.
