Ignore her. This depends on culture. In the US, I would always ignore girls after interactions. I've just moved to Europe and things are a bit different, or at least here in Italy they are. Ideally, do not text her first. However, if they don't text you first because they're being bitchy Italians - yeah I've had this before - hit them up. Soon. But not too soon. A day or two. Long enough to that she's hungry, short enough that she remembers how you taste.
Be unique. Fuck the classical dinner and a show dates. Do something you wanted to do anyway, and invite her to come along. Don't call it a date, call it a meet up. Go hiking, explore the crypts of your city, go to dinner at a hole in the wall place you've been dying to eat at where everything is home-made by a dude named Gianni who really hooks it up.

Dont start off with hey or hi. I usually but depends on the gir say, 'do you like adventures' or 'you seem like an interesting girl' or 'i bet i have better eyebrows then you :P' .
