I've yet to meet a guy/be the guy who can separate his feelings from a long term relationship and sex. At some point the two become twisted up and there is some chemical in the brain that makes it comparable to an opiod addiction. Shit is fierce. I've always been an advocate of plating exs but I think I've finally turned the corner and will just say avoid that shit. Sure the sex is familiar and fun but there will always be that other guy in your head, even after 20 new women your ex will excite some nerve endings that send you on some fucked up spiral that will mess you up for at least a week. You might miss out on a new girl or experience in that time, wasted on some parasite from the past. Cancel that shit, block and ghost and keep your forward momentum.

I'm going to go against the tide a bit here and say it's possible, but you kind of already messed up by losing frame and entertaining her need for emotional conversation. I have an Ex who is a level 0 plate (I don't socialize in public with level 0's). I never ask her how things are going in her life or entertain her when she tries to ask me. I text her, she shows up, and we bang. She leaves and I see her again when I want. You need to be in 100% control. I have zero emotional investment in her and am ready to ghost her at a moments notice. You need to have the mindset that an ex that is plate is just there for your physical pleasure. It works fine for me.
