You're 16 man. Get a job and pay for your gym yourself if they wont help you. Btw working out doesn't make you remain short, I have been lifting since 14 years old and I am average height in my country. Keep working hard in school and you can tell them you are doing great meanwhile doing other things. Don't let them tell you that you can't workout or have a girlfriend, it's your life, even though you aren't 18

Don't tell them anything important. If they start shit, say "OK" and do what you were going to do anyway.

You let them into your life, that's why they can control it. Kick them out of it as much as you can while being dependant on them.

I was in your shoes with strict European immigrant parents (probably from the same country you're from). The best thing you can do is to continue following your parents wishes. Keep working hard, things will let up.

Don't worry about the freedom aspect, you have plenty of years to get that. Get fit, get a good job or work on your own business. Move out and you'll have all the freedom you want. By that time you'll be in the perfect spot mentally, physically and financially (hopefully).

180cm short? tfw 5ft8 you live under their roof so you have to live by their rules, my suggestion would be to lie to them a lot and if they bring anything up just say, 'I'm getting A grades in every subject, what do you want?' but make sure you actual get A grades. also lifting doesn't stunt growth, it's a myth so just tell them its a myth. didn't know the olympics had maths and physics, do you mean a school competition? lol I have over protective parents, they paid for my gym membership since I said it would help me with school stress and anxiety, tell them the benefits of working out on not only health, but improving your studying.
