I'd recommend three actions:

Take control of the conversation. Offer a bit of information about yourself, pressure flip, and ask the same thing back to her. She doesn't want to read a long answer and you don't want to write one. Make it focused.
Build a bit of comfort. If it's the first time you're texting her and she's asking a vague question like "Tell me about yourself," you don't know each other at all. Coming right out and asking for a date will come across as socially inept, and even if she agrees your flake rate will be high. Stick to two or three safe topics (e.g. where she's from, how long she's lived here, what parts of town she's checked out) and joke around a bit, then suggest a date.
Don't get bogged down in conversation. Building a little rapport is good, having a full conversation via text is not. Make a move. If you aren't sure whether you've texted too much, err on the side of being aggressive.

I'd guess you aren't doing #3 all that well -- sarcasm/A&A doesn't come across as well over text, and the easiest way to fix "too much" is to do less of the entire interaction.

Keep it within a day. Show up at the place, if she doesn't show, ghost her.

texting is for logistics. Push that boundary too far the other way and you're just one of her "girlfriends" or to be ignored

Write anything that doesn't come off as you trying to validate yourself to her. That is the only thing you need to avoid.

I'd answer "Uhhh, what?" and then switch subject.
