You made a mistake not specifying when because it shows you're more interested in the idea of going on a date with her than with actually going on a date with her. You should have specified when she said when (e.g. "I was thinking Friday"). And if she's said no to a hypothetical this week and no to a hypothetical next week then most likely she won't hit you up when you're free. Also, why did you ask her to go for coffee? Do you really enjoy sitting in Starbucks and chatting? I feel like there might have been a more unique experience that you could have taken her on.
