Personally, I throw terms like "abundance" and "high value male" out the window. Jargon is for chumps, game should be a natural journey for everyone, imo. Put it this way, say you're bringing a girl to bed. You gonna stop because she's got red fingernails and white tipped toenails? Fuck no. What kind of a lover would that make you?
Same with saying "single" on your profile. It's such a little thing, that no one will likely notice.
As for this older lady, who knows. Are you into her? How heavy you wanna lay on the love?
"Maybe I'm just waiting for the right person to show me what I want." - safe, possssssibly playful.
"Maybe I just haven't met a nice hot coworker to make me wanna change it~" -pretty heavy and could maybe land you in HR.
"I'm trying to keep my options open, I don't want to be tied down." -honest.

" I purposely never put “single” on my bio(to show abundance) and I think this makes girls curious(i.e. is he dating, is he high value like I think he is??)" This is pretty stupid first of all. If you're a catch you're a catch regardless if you are single, in a poly, married etc, girls will hit on you.
"So, she asks yesterday “is that why you don’t date?” while looking surprised
This can be a few things, it can be a shit test to see how you react or she is genuinely curious. My gut is that she is interested in you, she added you on stuff so that indicates some interest. And when she asks about dating you can say " what makes you think i don't date? " or jokingly " i date, i'd date you like a motherfucker " while smiling ( that's not for everyone to pull off ) and if she laughs you can just try and pick a date.
Most of the time is how you say something, not what you say exactly. " I don't really know how to date, wanna teach me? "
