Honestly sounds like she's not that interested. If she was interested you'd know. I've slept with plenty of older women to know that if they were interested they'd let me know. Don't even bother replying, maybe shoot her a text in a month or two to see what's up and if the response if cold don't bother any more.

With some girls you have to push for it multiple times ( in the same night ). They either test you to see if you really want it or just are shy and want to "preserve" their good girl image. So you try, back off when she tells you no and try again later. Of course, if it's a hard NO you just give up.
This, assuming you really want her and will make the effort, but if it's meh, you can just give up and let her play her games

How was she shutting you down? How many dates? How often did you guys make out? This is a weird situation, if anything older girls are easier. Not that 25-30 is old by any means.
