If it were me, I’d probably just laugh and think you were kidding. I think throwing out the idea of going to happy hour during the week would let her feel like she has more freedom to choose. Plus, if she says yes, then you know she’s interested in spending time with you in some capacity.

It works if you show her you are fun and interesting for a few minutes before you invite her for the coffee. In other words, you need to talk 5 minutes or so at least to see if the vibe is right between you and then you may suggest coffee.
Ok that makes a lot of sense, how do I go about making myself sound fun on messages?

The same way you should always ask anyone out. Tell them you’ll be doing something somewhere or going somewhere. Tell them they’re free to come if they are interested. This way, they know whether they come or not, you were already planning on going there.
For example: “I am going to grab a bite to eat. I could use the company if you’re feeling hungry”

Just chat flirt and show interest In messages. If she likes you you’ll know it and ask for a coffee. If she’s in then have a good time show you’re interested not too creepy. Next date ask for dinner. If she comes then you know you’re good to go ahead. Just follow your instincts. That’s what I did and we’re dating almost 1 years now. It’s not easy dating and being in relationship with colleagues but if you like her that much then why not !
