I think if you’re interested, you should keep contact with her and maybe considering putting forth a topic to talk about. I made the mistake is being interested in someone who initially had interest in me (before any hangouts) but I would find myself withdrawing when it came to communicating through text and in person. Let her know you’re interested. Would you feel any different if in the off period where you don’t text she got with someone else because you weren’t there?

Good point. Although I'm thinking about playing it cool because my situation is slightly different than yours- we've already hung out and I already made it pretty well known that I'm interested in her while I was meeting her in person last week. We have another date set up for this weekend.

I understand. Then in that case, maybe letting anticipation build up between the dates by no contact could work in your favor as well. I’d like to think that if it doesn’t pan out, it wasn’t supposed to happen! If you’ve expressed interest, and she has as well then it sounds like you’re in a good place! Have fun!

If she’s initiating conversations and topics to talk about just going along with it cannot possibly hurt you. The only downside is that it may take up your time and you might not like texting much. If the text conversation is ending naturally let it end, but if she keeps texting you and you’re both clearly into each other mirroring her effort over text will only help you
