Awesome question though.
Things that immediately came to my mind:

I do have tinder, bars and clubs are a bit tough rn since I’m still a couple months from 21 there are parties but when schools out less so, I’m in STEM classes are not really women heavy unfortunately. I know the basic ideas of all the places to meet women that anyone whose read a book will know about (networking events, gyms, community service, meetup.com, grocery stores, mall, etc) my kind of “niche” is people interested in fitness but my problem is when I go to gyms it’s either old people or a lot of dudes and yoga is just suburban moms (not even attractive ones either) but there are lots of people who manage to find loads of fit attractive girls through yoga and gyms so clearly I’m just going to the wrong places, I figured someone here would know how to find the right kinds of gyms and yoga classes or at least something to think about.

Go to more accessible and beginner friendly gyms. You'll see less meatheads there. Also, the college campus gym will obviously have college aged girls.
Not sure where you're from, but at least in my college town, clubs are still open to 18-20 year olds with a cover fee. If you don't want to shell out a little bit of cash, house parties are happening every weekend, even in the summer. In fact, there's maybe even more parties during the summer since there's no school days, so more open nights. Even with COVID-19 and classes being over, there was multiple house parties each night this weekend in my town. You just have to look, be social and make connections.
In fact, making connections is the most important part. Unless you're highly experience and/or really attractive, a lot of gym interactions are going to be shut down. Women are there to just work out, not deal with sweaty men staring them down. Approaching in gyms may work, but the chances of finding the women you want are much higher in an environment dedicated to being social. I learned so much from going out every weekend, and didn't really learn how to have positive interactions with women until I was comfortable socializing with people in general. As you consistently work your way through social environments, you're naturally going to find the women you like, and they'll be pleased that you're approaching them in a low-pressure, positive and social environment.

Generally speaking I’ve found girls who are into fitness to have EXTREEEEMELY high standards and pretty much only date you if you’re at peak attractiveness and have high status regardless of how good your game is. Pretty much no other group of women I’ve experienced is this picky so you’re going to have to really be on top of your shit, you’re competing with tons of guys that look like a models, have a ton of confidence, and want a woman with the same fitness interests they do.
That said, you can approach when they’re coming and going from the gym (don’t bother women mid workout), yoga classes, run clubs, rec sports, and dance classes. All decent options and if you go to any of these on a college campus or around a college town, it will likely be full of women unless it’s like some powerlifting or boxing gym.

Honestly, I haven’t had that experience but could be cause I’m in good shape or that whole thing of how when you talk to women in environments you’re comfortable in you tend to do better. Regardless, I’m not really looking for models just a girl who you can tell she takes care of herself not super skinny.
Approaching when they’re coming and going is good advice though I wouldn’t also know how to approach them cause gyms can be tricky. That being said if the gyms in my city isn’t really giving great options you think I should wait till I get older and move out, and if I go to a decent gym (Maybe LA fitness) as opposed to family rec centers ( YMCA) I’d have better luck finding those in shape girls?

Depending where you move to and what part of town you’re in, the gym culture will vary greatly. For example, the planet fitness 5 miles out from my old college campus was like a 1:1 ratio of men vs women and 75% of the women were smoking hot. The planet fitness in downtown LA on the other hand was more like 2:1 men to women and only 25% of the women were actually attractive. Once I switched to a 24 hour fitness membership, I found that the gym in Hollywood was 75% dudebros while the one in North Hollywood had a bunch of hot chicks for some reason.
Your mileage may vary wherever you live

Firstly, I know your just giving some anecdotal experience and their is nothing wrong with that, it's just a fact of life that some women prefer one gym over another.
But to people reading this, if you're driving 5miles (8km) further just to workout in a gym with more women, there is something seriously wrong with you. The gym is a time to focus on yourself instead of cooing and cawing over women. Your results will be much better if you put in the work of why you're at the gym instead of approaching in an extremely solitary environment. If you're into sporty women, get into more dynamic environments where team sports or trampoline gyms/etc where communication is more encouraged. Still approach in gyms but don't go to another gym all the time if its going to cost you a shit load of time to drive an extra 5 miles, it's so ridiculous.

By 5 miles I meant more like literally right off campus because my sleep deprived brain saw 5 miles as walking distance for some reason. That doesn’t really change anything you said though, good points

5 miles is 8.05 km

Any tips/advice on finding the ones with girls or is it really just luck of the draw? I’d work out either way and I could take up a club sport league to see if I could find girls that way, be a bit more social and easier to approach too, but then if the gym has lots of girls and I’m having success there I’d prolly stick with just that unless I really had extra time to join amateur sports leagues.

I dunno, if you live in a large enough city your membership means you’ll have multiple locations to pick from and can figure out which one is the best fit.
If it’s a smaller city, with only 1-2 locations, then I guess it depends on the general culture of fitness in the area. If fitness is big in the area, there will no doubt be a good mix of women and men. If fitness isn’t a big deal in that area then it’s probably just gonna be a handful of fanatics (primarily men, a couple really jacked chicks, and maybe one or two of those girls who literally only do squats and hip thrusts)

Thx this is definitely a big help, and who doesn’t love a girl with a nice ass right? ;)

Fitness meetups like outdoor fitness. Intramural sports leagues like a coed soccer league or a coed volleyball league, and go to hipper yoga studios if there are only suburban moms at the ones you go to you’re not going to the right yoga studios.

I guess that’s my problem I don’t really know where to look for the “hip” yoga studios or even what those are.

Explore. Find people on Instagram in your area who do yoga, find out which teachers they recommend. Go to yoga meetups. Hot yoga often trends younger.
