Honestly talk and listen to her! She just may feel venerable after having sex. Do what you feel is appropriate. You seem like you have good intentions.

First question that should get an answer : how was sex?

If it wasn't that good or weird, that might have unsettled her. You should consider leaving her alone a couple days (no texts, maybe say you're busy) and then meet her to discuss what happened, so she gets time to think about it and you can casually settle this so you two get a better memory of the experience.
If it was good, she might just feel a little lost after that. Women tend to dissociate a lot between what happens in their mind and what they feel in their body. I suggest leaving her some space again but trying to lift up her mood gently. Maybe have a somewhat funny and playful answer: "Sorry" --> "I know I'm not that tough but I guarantee you didn't break me"

Why would she send a single message saying "sorry"? Any reason?

Tell her there's no need for anyone to be sorry and that you had a great time last night. Tell her you want to do something fun with her sometime soon.
