One of my friends who's good with ladies mentioned how it's great to disagree with girls on purpose (even if inside you actually agree with her) just to have a more interesting conversation or have more ammunition for teasing.

Does this technique have a name so I could do more reading on it?

If you do use it, how do you know what is the right topic to use it on and how do you know you're not overdoing it?
