First a tip to get more calls in:

Send her a text first to make her curious. Something like, "I just saw something that made me realize you were right." when she asks what it is say you're busy and you call her later and specify a time. Something like, "I'm really busy right now but I'll call you around 5." she'll either say ok or tell that isn't a good time and you can figure out what is a good time from there. That'll make them picking up much more likely because they'll be expecting the call.

Now about how you set up dates...

First of all, if you aren't a fan of texting a lot then the best thing to do is set up the date during the interaction you have when you approach them. It gives you something to talk about (and you can talk about that for 90% of the interaction) and it also makes for a smoother transition than saying, "You're cool. Lets exchange numbers."

Don't be like, "We should go to this and that..." have a date in mind and talk about things that make her want to do that during your conversation. A date I often used was either cake or ice cream because I used to live in an apartment that was in the middle of my favorite ice cream place and my favorite chocolate cake place, both were just a block away on either direction. So what do you think the majority of my conversation was about when I cold approached someone?

I talked about food, I talked about what kind of food she likes, I talked about desserts, I talked about cakes, ice cream, different variations (variations I know are in both places), etc. If you have decent game you can do everything you need with any topic. Comfort? "Yeah but I prefer my cakes a little more moist, don't you hate it when its just too dry? Man, cheesecake and mouse is a gift from god.", Breaking rapport/teasing? "I bet you can barely finish a slice though or you probably guilt trip yourself the whole way." Qualification? "How fast can you eat ice cream without getting a brain freeze?" Sexual escalation? "You would look so sexy with a bit of icing smudged on the side of your lips."

You talk about all that shit for 10, 15 minutes without ever mentioning that you plan to take her on a date for cake or ice cream (or whatever your date activity is) and then at the end when you've built everything up, the comfort and the attraction, just say, "Cake or ice cream?" whichever she chooses, you win. And then just say, "You know there's this really good cake/ice cream place at [general area] [describe what makes it cool for a second]. We should go there some time. What does your schedule look like?" then sort out all the details in person and once you got everything set exchanging numbers will be a given because you're gonna have to stay in contact to meet up.

Bonus points if you have photos of the place on your phone because showing her that makes it even more likely that she will agree to go because by seeing photos she can verify that its safe, its a nice looking place, the food actually looks delicious, etc. Just don't have anything to tip off the name of the place or where it is and if she asks just say, "You'll find out on Thursday. ;)" or whatever day you plan to meet up.

The cake or ice cream thing is what you call a false choice because whatever the girl chooses will have her go along with what you want anyway. You can do that with anything even if you don't have two things in mind. I could have very easily just said, "vanilla or chocolate?", if you want to have a coffee shop date you can say, "Coffee, Tea, or Chocolate?", if you want to do a movie you can say "Horror or Comedy?", you can even ask her to choose between two movies that are currently showing in theaters when you meet her.

Just plan what you want to do ahead of time so you'll know exactly how to set it up when you meet a girl.

If for some reason you can't call her and you can't set up the date in person (had to get her number fast, etc) then these are what I recommend you change:

Don't wait for 9pm to text girls. Its best to text them at about 2 hours from the time you meet them. Remember, you only met for a few minutes and even if you talked for an hour, it still wouldn't be that significant because she doesn't really know who you are and its easy for women to forget how they felt when they first met you so you want to keep that up while she's still reeling from the effects of your game and text her while everything is fresh in her mind. A trick I used to remember when I met a girl is to call her number as soon as its saved, I don't let it ring, I just dial it then cancel the call. Her number will be in the call log on your phone with a time stamp on it.
When you get into a text conversation just do exactly what I told you to do in person, have your conversation center around the date you're planning. Since you like coffee dates, try to find something unique out about your coffee shop or the area your coffee shop is in to make it a more interesting conversation because going for coffee is pretty boring in and of itself.

My fastest interactions by far are on Tinder even if its a girl that isn't DTF because I just open and immediately steer the conversation towards talking about things related to the date I want to do so by the time I have her number, we already have a date planned.
