If she sees other girls flirting with you, then she will likely be more attracted to you. If she just sees you running around hitting on every female present, then she will likely be less attracted to you.

But a woman knowing that you would be able to quickly meet another high quality woman following the end of a current relationship will not be a turn off. While a woman being surrounded by men normally causes a man to rationalize away his interest, a man surrounded by women will only heighten the interest of other women.

Jealousy... I was wondering how important is competition for girls in the attraction process.

It has an effect. But it's not necessary and whether or not that effect is desired, depends on what you want.

Imagine if a girl sees you flirting with another girl... she might want you because she will want to compete for you, but will she be more attracted as a result?

Here's the thing. If she wasn't interested before, than this is artificial. Unless you want to spend your time manufacturing such things. Which is probably not sustainable. Also, you'd probably become aware that she's not really into you.

Of course this only matters if you are looking for a serious relationship.

If you're not, than this sort of competition can be good to get in for a fling.
