I'm not really comfortable comfortable but I have met girls on the plane/train/bus. I didn't escalate though, I'm not good with that. How can I lower approach anxiety?

First, don't ask girls to go to the movies. That's guy time. Movies are a "no talking" zone, so you can't do anything to build rapport or escalate.
Second, yes, for some women, your height will be an issue. But that's not really any different from your skin color being an issue... some people just have certain physical preferences. It doesn't have to be a weakness. If your confidence is high, she'll see it regardless of your height. However, it's never good to be short and not ripped. What you lack in height should be made up for in muscle. She needs to feel "safe" with you, which means she feels you can protect her.

I did MMA for a couple of years with the best there were in my country. Although I'm not ripped, I'm in good shape and during training I could beat up guys that were 6ft6. No I'm not kidding. So I can defend myself. IRL I once beat up a guy that was 6ft2. That's it. So I don't really feel the need to be ripped.

I'd say that answers a lot of questions about your height then.
If you're a strong and skilled MMA fighter, just let that fact be known and they'll worry much less about your height.
The one advice I would give is, use your presence and power to make her always feel like you're bigger than her. Even a 5'9" girl in 4-inch heels will swoon if you make your presence felt.

Hmmm... maybe you could find some related thing to talk about like "oh yeah, I don't have much of a tolerance for alcohol... I wasn't able to drink when I was fighting MMA, it interfered with training." Or something to that effect.
Also, if you're using any online dating sites, you could just put "former MMA fighter" in your profile. That's a no-brainer.
About the presence... When you're walking to a table, or going up stairs, or in such situations, women really love to feel a strong hand on their lower back, gently guiding them.
Also, any time you have the opportunity to be at a higher eye level than her, reach down, offer your hand, and pull her up to you. You may be shorter than her, but you can still make her feel like you're always the one pulling her up.
And if you want to kiss, don't make her bend down or lean over awkwardly... instead, turn her and "dip", so that she's laying slightly backward and being held up by your arms. Then lean down and kiss her. Once again, creating the illusion that you're above her even when you're not.
