Often when I'm talking to someone, they often interrupt with questions, usually they ask something totally off-topic, and I get the feeling, that I am boring to listen to.

This happens on dates, in job, when talking to my parents and it really bugs me. I don't think I am a boring person, more likely it's about how I present thing to others.

I started reading books to increase my vocabulary, but that did not really help (but I got one more really enjoyable hobby)

Also I am an introvert and really into tech, engineering, woodworking, so when I am talkin about stg I am passionate about (science-stuff), many people stop me, saying they won't understand it so don't bother.

So how can I develop my presentation technique, my talking?

I hope this is a suitable subject for this subreddit.

Please note, that english in not my native language, so for example listening to Audible did really help my english, there are not many audiobooks existing in my native language.
