You said you hate having conversations over snap and asked at the end if you should start talking to them over snap lol. Are they interested in your company (social hook point) or do you gain real sexual attraction (sexual hook point)? Try to strike up a genuine connection where they are moved emotionally and you make a mark on them. You'll feel the difference between social and sexual hook points if the shift happens. That's when they want YOU specifically and not just your presence and what you have to say, for the night. Then try to take it as far as you can, push beyond the level of interest you usually get and move it towards sex. If sex is not viable, grab their snapchat or instagram. When you see them next, joke around and puke your personality onto them so they remember who you are.

To preface, I'm a college student and I usually meet chicks at a party on the weekend (I'm busy pretty much the rest of the week).

I'd suggest to you that there are a variety of ways to meet girls socially, who are open to meeting new people. Having some variety can help spice things up for you. Some possible suggestions on this note:

Hash runs: Trail running + beer + fit people = win
Couchsurfing meets. Hang with travelers and people who like to be around travelers.
Social partner dancing: Salsa, Lindy Hop, West Coast Swing, Argentine Tango, just to name a few. You really can't go wrong. Learn something fun and have an excuse to be close to a girl in a fun and non-threatening way. (Just respect it as an activity & means to meet new people and work on self-improvement first, and place to meet women second.)
Download the Meet-up app. Scan for groups near you that you share an interest with.
Do a Facebook search for your city/town/area. Look under the Groups and Events tabs. Or you might search your city + some activity you're specifically interested in.

They seem really interested when I'm talking to them but then it's just keeping that amount of interest til the next time I see them which I struggle with. I'll usually try and meet them for coffee or something between classes but that will be several days later and I hate having conversations over snap between then.

You shouldn't have to do anything to maintain anyone's "interest." If they really are interested, then they'll be working with you to make a meet happen.

However, I'd suggest to you that a rushed meeting for coffee between classes is a poor way to follow up. REALLY poor. Like you don't have a gap for lunch or dinner or something later on at night? On any weeknight?

How about on Saturday or Sunday? Parties are usually at night on the weekend, so why couldn't you meet with someone in the daytime during the weekend?

In any case, you're making a mistake if you're meeting these girls and then going radio silent for days after. You might as well tell them to go away if that's what you're doing. You ought to be leaving a note the very night you meet them, if you're meeting them at a party. And in that note, you might even suggest the meet-up, if you're not already investigating that when you meet her the first time.

So I guess my question is, how do I keep them interested in meeting up later in the week? Should I just wait and invite them to the next party the next weekend? Should I start talking to them over snap?

You shouldn't have to "keep" anyone's interest. If you're not acting like you have a goldfish attention span, then you'll be fine. Don't ignore them for days after meeting them. Set up a meet sooner, rather than later. (But do this in a relaxed way, not as a formal date.) And don't try to have some conversation over Snap or whatever.

Also, inviting a girl to a party is a terrible idea. You want to get some one on one time, not invite her to the social chaos and competition of a party.

What works for me, because I'm extremely good at it, is communicating through GIFs. I once talked to a friend for about 30 minutes with nothing but GIFs until she snapped at me and asked if I can actually talk without them. Fast forward a few months and she started using them, too. There has never been anyone who didn't like me for using them and I always got complimented by women for how expressive I am through them. Some even said they see me when I send them one. It's really a powerful tool if you can match them with your personality and it gets the message across a lot better than a regular message, which can easily get misinterpreted in the digital medium.

GIFs can give you a get out of jail card when you're trying to break the ice instead of just saying the bland "Hi!" or "Hey, how are you?" As an example, pick one of someone knocking on a door or poking someone and the girl will answer because she thinks it's funny.

Mix them up with regular talk and you're pretty much good to go, but that's all useless in the end if you don't have any game in real life.

To summarize, keep it funny, don't be an ass kisser and leave them wanting more.
