I would recommend Thirteenth Step. It kinda sucks because that's where all the people who just turned 21 go, but it's usually packed if you just want to practice approaching.
There's a lot of bars in the LES that I've been to but forgot the names. Drop Off Service is pretty good too.

After some research the ones I have my eye on are 3 in the West Village (Fat Black Pussycat, Off the Wagon, and Down the Hatch), and one in the East Village (Keybar). Any experience with those?

I lived next to this place for 4 or 5 months. I never went in, I always thought it was a hole in the wall gay bar from the outside, never noticed any attractive women going there.

Been to off the wagon and Down the Hatch. Off the Wagon is pretty fun, they have beer pong on the upper level. Down the Hatch is pretty small and can get packed as fuck. There's a nice pretty chill bar across from Down the Hatch on the corner, forgot the name though.

The Beergarden at The Standard hotel (meatpacking district) was good when I went a couple years ago as it's a great place to get talking to people.
