If you're driving just gesture while you talk and touch her from time to time to get her used to your touches.
These touches aren't "making a move" or intended to deliberately turn her on, they're only to make you seem like a touchy guy (work on being an actual touchy guy too and just do this with everyone) and so she gets comfortable being touchy with you.
If you're confused about what points in the convo to touch her at just think of when there would be a question mark or exclamation point.
So if you ask her a question you can gently rest your hand on her forearm or thigh as if you want her to pay attention.
If you laugh out loud from something that was said you can put your hand on her shoulder or thigh as if you're posting your hand on her for support or pushing her away slightly to acknowledge the joke she just cracked.
If there will be times that both of you are passengers then do what I said above but you can also add in more prolonged touches if you see that she's getting touchy with you too and responding well to your flirting.
Assuming you don't want others in the car to notice, you can start by repeatedly brushing her with the side of your arm or subtly rubbing your leg on her's while you talk.
You can also do stuff like brushing her hair behind her ear or fixing her clothing, this can give girls butterflies.
Other than that, save the bigger escalation for when you're out of the car.
If you're gonna be the driver for the whole thing then just do the first part of this and save everything else for when you're off the road.
