Just completely forget about that lost text. Plan something cool and invite her along. Assume she's into you and act accordingly.
Until she expresses emotions to you via text, limit its use to coordinating plans.
Still though, she could always end up blowing you off, and we have no way of knowing why. This needs to be ok.

I'm 100% sure. She's been posting on Instagram and Snapchat since I sent it so obviously she has her phone still...
EDIT: you were actually right! One of the cell phone providers in my country, Wind Mobile, has a bunch of dark zones in terms of service. She went to go visit her aunt on the west portion of the island later that night and she had no cell service!
