Yeah but for me it's drunk vs sober. When I'm drunk I know exactly what to say, how to feel, when to escalate. I just know "game" and can use it without think about it. But when I'm sober I'm nervous and could never pull off the shit I do whilst drunk :(

Same here, got a girls number the other night and thinking back on it I have no idea how I managed to do it drunk. Still haven't texted her back besides to say who I was.

....It's scary how good I am with TEXTING when it comes to building attraction, and how my communication breaks down all too often when I'm in front of a girl's face.
Going to be blunt. If you aren't meeting your dating goals with this "attraction" you claim to be building over text, then it's not real.
To be blunter, you don't build real attraction over text.
If you think you are doing so, then you have some work ahead of you. I'd recommend starting off by getting more comfortable interacting with strangers. Mixed group of people.
Download the Meetup app. Look for groups of people doing something interesting.
Take up a partner dance. This is deceptively good at teaching game while giving you the chance to develop a useful social skill. Something like salsa, Argentine tango, Lindy Hop, west coast swing, etc. (Not ballroom)
