Going on an athletic date with a fellow runner (our second date). We both enjoy running, but she has more experience with longer distances.
Points for trying this out, though you haven't explained what you like about running and what she likes about it, so it's unclear whether this is really such a great idea. Why, you ask?
Running is usually a solitary and introspective activity. Talking while running, is a lot like trying to have a conversation with someone who's meditating.
People usually like pushing themselves and testing their body's limits, or at least pushing right up to their limits. When one is exerting oneself at that level, they won't be capable of a conversation.
Conversation level running is at a pretty low level of exertion. So if you're running slow enough that both of you can talk, one of you will possibly be chomping at the bit, wanting to go faster.
If either of you are competitive about your running, being on a run with someone who's not at your level, can get old REAL fast.
So running as a date is kind of like going to the movies as a date. If you actually do the run, and you have less of a date. If you actually socialize, and you don't really get the run. It's often a zero-sum game.
We are going through a new area and I plan to swing past some parks and such, but I would like to hear some tips for people who have gone on similar types of dates before.
I have no idea what area you're in, or I could make suggestions. But finding viewpoint vistas and the like, would be a good thing, as long as you're going to do this.

Any tips relating to escalating, talking, breaks and whatnot are appreciated.
You've said absolutely nothing about this girl, or how well everything has been going until now. But as a general rule:
While you should be paying attention and testing physical boundaries with touch, you shouldn't be married to the idea that escalation needs to go very far. You're going to be out in the open, possibly with people around or the possibility of people being around. It's not like you're going to find a place to have sex with her and even if you did, you've said nothing to indicate that this is a possibility yet.
Talking: take it with a grain of salt. If she "really" enjoys running, then that means she's going to want to run at a pace that won't necessarily leave much opportunity for talking. Take it as it comes but don't go in assuming that you need to have some earth-shattering conversation during a run.
Breaks: Meh. You're on a run. Plan the real "breaks" and actual date for after the run. That's your break time. Some sort of snack, food, ice cream, whatever, after the run.
__3: Hash Runs__
If you must go on a run that's a date, you might consider making it a "hash run." It's a run like: a run + hide & seek + beer. Just look for "insert city name here + hash run," on Google.
