Seems like she's clearly interested, you've just gotta make a move. Granted, seems like you still have a chance to but you've gotta be pretty swift about it (as in the next time the two of you are out for drinks or something)
As far as her offloading her relationship problems on to you, that could be taken in two ways; either she's simply offloading her issues on to you or it's yet another indicator of interested (generally only so when there's other signs)
As far as being talkative in person vs text imo that's a pretty good thing. No one likes to have someone blowing up their phone all of the time while they're busy. Chances are, she's a busy person as you should be. As long as she's receptive and generally engaged in person I wouldn't even remotely worry about texting etc (unless say she texted quite a bit then all of a sudden hardly texted you and wasn't up for making plans)
Going forward, I say next time you get her out show you're interested in her in a non-platonic way. Create chances to physically touch her (guiding her through a door by the small of her back for example) and just make your intentions know. If you linger too long, and don't make any sort of move, she will just assume you only view her as platonic and it will essentially kill any chances.
Worst case, she only see's you as a friend but at least you took a shot at it. From there, what you choose to do is entirely up to you (remaining friends is possible, but only if you see her in a platonic light; if you still harbor any possible feelings you're only stringing yourself along when you don't need to)
