1) Attention. They want attention, and you're fueling their attention seeking desire. She doesn't want to make her guy jealous, she just wants to be the center of attention, and wants all eyes on her.

2) They want to make their guy jealous. They want to make their guy jealous so that he flirts with her more, and pays her more attention when they're out.

3) They want to know how far you will go as they continue to explore their options. Some girls are bored with their current relationship and are too lazy/immature to end their relationship, but want to see what else is out there before they end what they have - the arm chair psychologist in me says it's because they prefer the social status of being part of a couple over being single, so they would rather be in a relationship they don't like and look for new potential partners instead of being single and looking for someone new. Others are simply in a open type of relationship - they just met and are getting to know each other, so she's not invested in her current date and is still looking; she's not exclusive with her guy, so she's probing others to see what's out there.

I'm sure there's more reasons. My experience has taught me that it's usually a combination of 1 and 2.

Scenario 3 is really a mix of a bunch of scenarios, and in my experience is pretty uncommon, but a possibility.
