So, you saw her two times and you like her? PLEASE don't go into oneitis for a waitress. These are the most hit on and hard shelled women you'll ever meet. Mainly the ones in more popular venues or pubs.
I do think you'll do good to yourself by following /u/youcantdenythat 's advice on this, you'll stop whatever you got from growing into a oneitis.
But if you have a little bit of time to spare, PUA has aplenty material on them. The keyword for looking at it is "hired guns".

Don't date a waitress. Only do ONS or short-term things with them.

They're hit on a lot, so you're better off not doing anything.

But for practice purposes, just make a few back-and-forth small talk. Then say something like "I know you probably get hit on a lot, but I wanted your number anyway."
