What ever happened to just going up to her and just talking? Headphones is anti social behavior.
Just go back to the dining common area, be like "hey, we have class together-- I'm just having a bit <insertsillyexcusehere> lets be friends/what are you doing tonight?"
Then you can go establish bridges, be a bit sarcastic,confident, etc.
Worst comes to worse, you'll stutter, put your eyes down and whatever.
Go back, say Hi, Introduce yourself, chest up, look in her eyes, don't over exert yourself.

I would've but she was the one who came in after me. And at the dining commons she was with a guy friend and I thought it would be weird to do that.

Who cares if it's weird. Gracefully enter, say hey, maybe ask "Am I disturbing/interrupting?" and then go on with the conversation or make one up.
That's better then putting her on a pedestal and thinking "what if."
