They certainly think about sex more than we do. In fact they think about it all the time, though not necessarily the mechanics of it. They think about guys and relationships a LOT.
As for orgasms, they can have different kinds. My GF has clitoral orgasms, vaginal orgasms and tends to have a series of orgasms in a row with aftershock type of twinges.
Guys tend the have the single volcanic eruption type of orgasm, kaboom then they're done.

No. Women do not enjoy sex more than men.

They have motivational reasons to tell you that women enjoy sex more than men: they want guys to close. Many men feel restricted in their sexuality based on things like: if they are trying to get a girl to have sex, they feel like they're being pushy and selfish because men believe that sex is more pleasurable for men than for women, hence, trying to have sex is about pleasure for him and work for her. That can lead to men feeling guilty about wanting to have sex; they end up not trying to have sex because they fear being a burden.
When Todd and Julien talk, there also a selection bias going on. Imagine this: you go to a club to pickup some girl. Imagine that 10% of women there get a LOT of pleasure from sex (and therefore have a high sex drive), 60% have an average sex drive, and 30% have no interest in sex at all. Imagine you take a girl home. What is the likely traits of a girl who went home with you? It's more likely that the high-sex drive girl goes home with you than the girls with no sex drive. Now, you discover that 50% of the women who went home with you have high sex drives and 50% of them have average sex drives. You conclude that, in the general population, these same percentages are also true - that 50% of women get a LOT of pleasure from sex and 50% enjoy sex. You'd be wrong. Todd and Julien are experiencing selection bias. It's sort of like saying, "100% of the people who ordered spicy food at my restaurant love spicy foods. Therefore, I conclude that 100% of the US population loves spicy food."
As far as the original question:
First, quite a few women have trouble even reaching orgasm. Many women can cum from oral sex, but not PIV sex: "According to Planned Parenthood statistics, as many as 1 in 3 women have trouble reaching orgasm when having sex. And as many as 80 percent of women have difficulty with orgasm from vaginal intercourse alone... Female sexual dysfunction (FSD), which encompasses the inability to orgasm, is very common—as high as 43 percent, according to some surveys" (Source) I've been with a few women who had a lot of trouble orgasming, or couldn't orgasm. One ex-girlfriend of mine says that she's never had an orgasm - not from sex, not from masterbation. Another girl I was with said it's really difficult for her to orgasm, and she would usually just give up during sex. She said she used to get annoyed at her ex-boyfriend because he would keep trying to get her to orgasm long after she knew it wasn't going to happen that night.
They say that women have more nerves in their genital area than men do. I'm not sure if that's true, but studies have long shown that it takes the average woman much longer to reach orgasm than the average man, so apparently those extra nerve endings aren't getting women there any faster: "During intercourse, on average, it takes women ten to twenty minutes to reach orgasm, while men, on average, take seven to fourteen minutes including foreplay, and two to three minutes after intercourse has begun."
I think there are plenty of information which indicates that men like sex more than women. For example, men masterbate more often than women. Men report that they'd like to have sex more frequently per week than women do. Women with low sex drives is a lot more common than men with low sex drives: "For women, low desire is one of the most common sexual issues, and it can affect you in many ways...In a recent U.S. study of 2,207 women between the ages of 30 and 70, researchers found that 36 percent had low sexual desire. About 8 percent had hypoactive sexual desire disorder, defined as having distress about having low desire." (Source) Also, large numbers of married women report that they'd rather read a book than have sex: "Sixty-three per cent said they would choose hitting the pillow straight away, putting on the TV or a opening a book over sex... However, it was not all bad news with 37 per cent saying there was 'nothing else' they would rather do than make love to their husband." and "the poll revealed that an overwhelming 40% of the women surveyed would rather go shopping than have sex. In the survey of British sex habits, 37% revealed that they would be happy in a sexless marriage, with the figure rising to half of women if they had been with their husband for more than 20 years."
Here's the thing: as you can probably tell from those last quotes that not all women are the same. Some women really do want sex ("37 per cent saying there was 'nothing else' they would rather do than make love to their husband"). Some women do love it. I'm convinced that there are a lot more men who have medium or high sex drives than there are women with medium or high sex drives. However, those women do exist. Not all women are the same. Don't make the mistake of thinking, "Oh, this girl fucking loves sex. Therefore, all women go crazy for sex." That's simply not true. The opposite is also true: there are women who don't want anything to do with sex, but that doesn't mean that all women are repelled by sex. Further, a woman might change over time - she might love sex now, but 20 years from now she might be that woman who sees sex as a chore or vice-versa.

Realize that they could have had many reasons for saying this. Often, PUA coaches say things to encourage guys to venture outside of themselves and do things they are uncomfortable doing. Visualizing women as wanting sex even more than they do, while inaccurate, is motivating to a lot of guys. Like the whole "assume attraction" thing. Are all women really attracted? No, of course not. But some coaches have phrased it that way just to get guys motivated to take action instead of sitting back and overthinking.
Really, the truth is more complex. Women and men enjoy sex. But while men are celebrated for being sexually liberated, women frequently face social consequences and shame for being the same.

I think this is multifactorial. Yeah, pre selection is real, but we should also notice that a girl takes way more time to get orgasm than us men.
Sex isn't a big deal for women. They can't have it any time they want. Even the more awesome mPua you can imagine has to put more effort to get laid than a hot girl. Also, in my view, the only impediment due to the world isn't an orgy (at least with women and the 20% men) is the bitch shield.
Correct if I am wrong, but the 80/20 rule applies, in this case, for non monogamous relations. Then, the top 20% of men are fucking the 80% of women. But if we assume this, we conclude the other 80% of men ARE FUCKING the another 20% of women.

8 out of 10 women having sex with 2 out of every 10 guys, is a pretty extreme statement. Which doesn't mean it's false, but it does mean that it needs proof. If we're going to talk about statistics, this needs to be backed up with hard data.
All this stat has ever been, is speculation.
Some primates have these orgies, but afaik things started to change with the agricultural revolution
