How can someone be entertaining/fun over text?

This is something I learned from using Tinder: small talk doesn't get anywhere. It usually leads to talking for a few days before one of us gets bored and then nothing happens. You're right, save those questions for the date.

Here is how I do it (with a lot more success now):

Open up with something funny (pickup line, name pun, etc...) Show her your sense of humor and gauge hers as well.
Set up a date or invite her over in less than 5 messages. I keep it short and sweet now. I used to talk for days to girls on Tinder and, again, get nowhere. Now I try and get her to do something as quick as possible. I don't think she wants to talk for days on there and I'm sure she has other guys trying to do the same with her. The key is though, when you bring up the date it has to be topical and organic to the conversation. It shouldn't be completely random otherwise that would seem weird. Be creative and be smooth.
Get her number and text her later to confirm the date. If she's just coming over to smash you don't even need this step.

Try different things and don't be afraid to look stupid or not get a response. Try to entertain yourself.
