You're not going to find many that "count" because the only place it's even really discussed anymore is in soft traits (IQ, Behavior, etc.) where it's much more open to a nature/nurture debate. The reason why it's not discussed anymore in hard traits (Height, weight, bone density, etc.) is that was realized to be true so long ago that anything talking about it would be like someone writing a paper about water being wet.

Now, as for WHY males have greater variability:

Men are more variable than women, and women are the limiting reproductive factor. Mother nature set up the rules for all mammalian species such that males vary much more than females do, the males who are unfit for the environment die off, the males who survive breed with the women (who, being clustered near the center of genetic expression, are unlikely to be unsuitable for surviving the environment) and shift the genetics towards what is optimal for the environment.

IQ is definitely the biggest one.

I'm sure there's plenty of research out there, but all you really have to do is look at the Nobel Prize winners in Physics, Chemistry, and Medicine over the years.

Women have higher rates recombination in general, so men are more varied in numerous physical traits. There are more men at the extreme ends of the spectrum, and the spectrum is wider. Women for better or for worse tend really hover around the median.
