It means she is stupid.

Not in a malicious way, but like many women she's never had to learn good conversation skills since she can get by on her looks and the fact that she has a vagina.

Same as the other examples you gave

she says she doesn't really like wings

Then she asked what type of car I drive

then said something about her ex

This is the kind of thought pattern you'd expect to hear from someone without a fully developed brain....like a 5 year old kid who can't keep their mind on one thing and just blurts out whatever thought enters their head.

Just treat her like a child, tease her and keep it light and fun. Don't overthink it.

You ignore her and pay her no mind. You're already overthinking it. Don't like wings? Oh, well good thing they have 150 other items on the menu? Your ex lives here? Oh, I like bagels. You're going to calm me back? Oh, let me stop everything I'm doing and wait by the phone with excited anticipation.

Stop worrying about it. Tease her, have fun with her, and don't take a damn word she said serious.
