You should be approaching other women. You know how sharks can smell blood in a water a mile away? Women can do that with neediness. So have some abundance mentality and don't worry too much about any one chick.
She said, "oh shit I am so sorry, just saw this." Say, "Sweet. I'll see you tomorrow at 8" or whatever the time it is. She'll either say yes, no, or whatever. Just don't worry about it.

If she says yes, go and meet her.
Is she says no, for whatever reason, just say, "Let me know when you get your schedule figured out" and then soft next (don't text again until she reaches out to you). Unless she suggests an alternative time, then do that. When she does reach out, you can try to schedule another meet up, but again don't try too hard.
If she doesn't respond, you have a few options. I wouldn't even show up because she just doesn't sound interested (it'd be funny if she did show up though, ha!). If the coffee shop is next to where you live, and you life coffee, you can just go and read a book or whatever you like to do. Or approach girls. And then hard next (never talk to her again) when she doesn't show up.

Honestly if you’re worrying about this, I think the easiest thing for you to do is talk to more women, you won’t question it a second time. A girl isn’t fulfilling your needs? Move onto the next one you’ve been chatting up so on so forth

Soft next; go with your gut but keep options open. If she reaches out to you roll with it, otherwise blowing you off every time you try is a bad sign.
