Has she said explicitly that she wont date younger guys?
If she always bring up age just play it off cool
"I am old enough to have fun" "life has aged me like 10 years the last year"

Sounds like you are in a good spot. To me it sounds like you are in the flirty/shit test zone. On the top of my head, next time you two are together and she says something like that: tell her that while that year passes you can have fun and reach out for the kiss... let's hear what the others say but you are in a good zone because she has expressed interest and you being a couple has been a conversation
Even, you could answer something like "dont worry, I am not attracted to older women" just to taunt
Just thoughts, Wishing you luck

I usually date women much older than me or much younger than me because I don't care about age. My only rule is +18. The trick is to treat people as if we all were the same age. That's the most charismatic trait ever. You will notice the difference.

A one year age difference is nothing. I've actually seen more guys be finnicky about dating someone older than the other way around.
When I was 21 I dated a guy who was 19. It was never an issue and I saw him as my equal, because we were in a similar phase of life and we got on well.

Currently am seeing this older girl on occasion. She has 7 years on me. When we first met she did give me shit about being to young. I just didn’t let it phase me. She hit me with the “Oh you’re to young for me” I replied with “Yeah I know we can’t buy matching canes together”. It diffused the situation and I have been seeing her ever since. The only way I see this being an issue is if you’re much younger. Like she’s 21 and your 20. A majority of girls do like the man to be same age or slightly older. As the guy is usually more put together and has more life experience. Girls feel like a mom when they’re older. Again not all, but from my experience this has been the reasons.

"Girls feel like a mom when they're older."
Speaking from experience, I would argue that this is only applicable when her mate acts passive, indecisive and lazy in courtship and dating.
The man who I felt like a tired mom around was slightly older than me.
Take a decisive and confident role in your relationships. It will bring out the "woman" in any girl you date, whether a bit younger or a bit older.

Act decisive and confident? That's so unfair to men. How lazyphobic of you.
