There are a ton of girls that make it a point not to fuck on the first date. Just go, stay relaxed, have fun, connect with her and enjoy yourself. If you make a good impression, she'll want to see you again. There's a reason she said yes, and she's probably just trying to get a feel for who you are before she gets intimate.
The reason PUA's say that is because they use shady tactics and basically fake being a high value male. They use the heat of the moment to woo the woman into bed and for the vast majority of them, if the woman comes to her senses, will realize that they aren't the kind of guy they should be hooking up with. Also those techniques have much higher success rates in places like bars or clubs where a lot women are out to get attention from the opposite sex and where inhibitions are already lower because alcohol is usually involved. This is an entirely different situation. This is more like a date. The leg work is already done, she wants to meet up with you, now you just have to show her a good time.

If you want to only hook up you need to be straight forward with her, she clearly doesn’t trust you or have a real connection so you need to build that first. If she was down for just a hook up she wouldn’t suggest coffee she’s trying to gauge if she even likes you. Also I don’t know what PUA you read that says sex in the first date is a must but that’s dumb as fk. Yes you need to make your intentions clear and escalate letting her know you have sexual Interests but assuming every girl would be down for a ONS is nonsense and will only scare off potential hook ups because you come off too aggressive and sexual from The start
