I'd wager the bulk of your problem is right there.

It's the sort of thing you need to learn how to get a feel for. Intellectualizing your way through the experience is how you refine it, but you need a foundation first to get to that point, meaning, you first need to get comfortable talking with girls, holding a conversation with them for a period of time, that sort of thing. If you digest all sorts of theory and then expect for that to translate to proper, fluid game with very little to no experience simply chatting up girls, you'll find yourself getting tripped up over and over and over.
