Don’t text her too often! That is one way to kill interest for sure. Also, if you text too much what are you going to talk about in person? I would talk to multiple women at once, there will be no worry about her losing interest if you have other options available.

Some people text their friends all day, like they have dozens of conversations going at once. If you texted regularily, keeping it going is a LOT easier. But for now, just text her once a day, but then text her more regularily when the meetup approaches. You can also do voice messages and even do calls.

You're basically going to have to text her the same way you'd post stories on IG to stay top of her mind.
That means sending her frequent updates about your life that makes you look cool and attractive (except that if you have enough time to waste on sending a girl such texts all the time over 1+ month it means you're life isn't that attractive).
And it's also extremely risky of an investment of your time since the first guy she meets IRL will immediately have a stronger emotional impact than you being the pen pal.
So get her on IG, post cool stories and in the meantime focus on other girls.
