You're nervous. Relax. Or at least try to. It's not something you can just flip-a-switch and turn on, but the more comfortable and relaxed you are in the presence, the more you can turn on that witty charm.

Opposite here, in person I'll say what comes to mind, while with texts I am rewritting often and each version I like less than the previous. Would also like to know if there's something I should do?

Take a breath and slow down, before you respond. You don't have to blurt out everything you think right when you think it.

This is a good opportunity to practice your smile, take a breath and then the the quip roll off your tongue.

Two things, I hope at least one helps.

The first is practice, practice, practice. If you're not used to getting out there and going through the process you will not have the mental muscles to really break out in you PUA skills.

The second is, for many guys it's easier to email/text females because it gives them time to think, rewrite and perfect their response. Face to face and you have to think on your feet. The best way is to slow down, think before you speak and reply as if you had nothing to lose. A confident response is always better than a weak reply.
