So I work retail. What is there to say?

I am doing a day course (to get a job in a new industry) where I met this absolute milf. I'm 27, she's I don't know, 40ish? I got her number as she was throwing every IOI at me and joking around with me the whole time. I don't have to do the whole course so I will next see her in 2 weeks unless I can get a date before then. She declined the first thing I suggested saying that day is no good and 'I'll let you know when ;)'. I replied that she should get in early as I work most nights. So a natural question came from her next, 'what do u do?'

So while this is a specific situation, I always feel bad when I respond because other people are generally in a better occupation by this age. I'm not beating myself up as such, I am doing the course to improve things! But the question feels like there's more to it... Feels like whatever response I give other than 'I work at x company doing this' (absolutely boring) is me validating myself to her, like I'm saying 'it's not that bad, I'm fine with it, honestly, here is a half hearted reason why!'

Thoughts on joke answers (secret agent, lion tamer etc) versus some positive spin on the truth? (I'm a checkout chick at x since I moved here, it's been fun but they won't let me work enough!). (I legitimately like to work a lot of hours to earn a lot of money so this is the truth).

I know I'm overanalysing this but it's always something I feel bad about or get stuck on. Admittedly she is doing the course too so SHOULD understand that I'm doing it for a reason..
