Is there a way to get her to "tell it to me straight" without coming off as a crazy person? Or am I just a crazy person?

If she's on tinder she's probably seeing a bunch of different dudes. She may have been interested in the moment but may have met someone else. Happens to the best of us, there's really not much you can do. If she keeps flaking then move on, she's just not that interested, sorry dude.

We live in a society of instant gratification. She most likely wanted a one time thing or to have someone there to satisfy her when she needs it, don't be to pushy. If your into her let her know in a subtle way but don't bombard her with texts keep your options wide an vast.

I'm not one for hard-and-fast rules, but I do have a few. One is to NEVER transfer responsibility for arranging the date to the girl.

Reasoning:

I don't enjoy the loss of control waiting for her to get in contact with me
When you choose a time and place to meet it's a good chance to prove what amazing taste/knowledge you have of cool places
It's more confident / attractive to 'risk' exposing your preference
You seem busier / in demand / popular
Girls often resent being forced to make decisions!

You said that she shot down your options. What were they? Because it sounds like you were on the right track prior to the "just let me know when you're free" line.
