Everybody makes emotional connections with co-workers. It's just the way people are wired. To me, it sounds like you are more or less crushing on the idea of her being your gf than her. You deal with it by coming to grips with the idea of you being single and working on your own loneliness. Don't make it weird for her.

Go get other hobbies and do things that you enjoy to fill up the time you're otherwise spending daydreaming.
