How can i let her down without hurting her ?

Do it asap and do it honestly. You probably are going to hurt her. That's the nature of relationships - usually one person is more invested and in this case it's her.

Tell her you're not interested in dating, and put an end to it.

Don't waste her time, and don't lead her on.

Stop answering messages? What's she going to do, hunt you down. If you want to be nicer just send a message saying something along the lines of:

"Hey Amy, I'm glad we met eachother in Mexico, it was a great time, but I'm not interested in starting a relationship right now. I think it's probably best if we don't hangout to keep things simple."
