One thing you can try is to be 100% honest with your expression. By that I mean express to her exactly what you are thinking and feeling.

This is a simple thing that gets overlooked a lot in the pick up community, but it’s very powerful and ones you get used to it you are way more free in your expression because you don’t have to search for anything to say, because if you run out of words, you express that!

Ask them questions about their lives. Don't worry about your stories, find theirs.

In your position I would google 'how to keep a conversation going'. Never be to proud to google the basics, in any field.

I have a problem with talking to attractive girls in general about anything.....

One thing that helps is getting out there and socializing with people in the real world. Not like going out and cold approaching/just approaching attractive women you don't know. I'm talking about getting into mixed groups of men and women.

Go for low-hanging fruit before you throw yourself in the deep end. Low-hanging fruit is there for a fucking reason, man. :) You can get comfortable talking to people in low pressure situations.

Couple things here:

You're misusing terminology. You don't need to escalate in the initial conversation/meeting, at all. You also don't escalate with words. You escalate through touch.

As for keeping the conversation going, that's easy. The SAME principles apply for socializing with ANYONE, girls or guys.

Observe and pay attention to what's going on around you.
Relate to people based on these things you observe; drop throwaway comments based on whatever is going on. Without expectation of further interaction.
Start a conversation if someone responds well to a comment. (If they're hooked.)
Actively listen throughout the interaction. When they're talking, you're not even thinking about what you want to say next because all your brain power is devoted to taking in what they're saying. Because information is power.
Once you've been listening, you'll have good information to follow-up effectively. Asking about her emotions (how she felt about something) or motivations (why she did something), is something you can do more easily when you're listening. If you can steer the conversation in these directions, things start getting interesting.
Rinse and repeat. This works for girls or guys. If you're really having good conversations, then they will have aspects like what I've described and you simply apply them to talking to ANYONE. If you're not using these concepts already, then applying them will only help you.

One thing that needs to be learnt is being confident with silence. No awkward looks, glancing or talks about weather. Just be sure of yourself and what you do. It is ok to stop talking and be the moment. And keeping conversation going is a skill that only can be aquired over time.

The best pickups I've made were when the girl does most of the talking. 30/70 ratio at the most. Ill initiate conversation, but I ask leading questions and let her steer the convo. If it gets silent, I basque in that pressure, and just stare at her. Girls feels this tension and will typically want to break it by asking a question. If there was a long pause, they break the tension by asking a question, I will give them a reward or affirmation for speaking up, to let them know conversation is a two-way street. Its also a good moment to initiate physical touch.

The biggest mistake new guys make is they feel the need to impress and talk WAY to much. Most of the time they should be talking less.

Plus, not showing all your cards gives you an air of mysteriousness and can make the girl more curious and attracted to you.

But yeah, my number one piece of advice, if there is an awkward silence, stare right in her eyes. You will feel a TON of pressure, but just sit in it and accept it. You can even look at her like "does this girl know how conversation works?" You put all that pressure on her. Men can handle pressure but women generally cant. 9 times out of 10 she will keep the conversation moving.

I got this Advice from Nick Sparks by the way. Probably changed my game more than anything else because Im pretty introverted, so I was able to utilize this advice and imploy it much or easily. The hardest part is dealing with the pressure of that stare, but you will get good at it. Girls will sense that confidence and the fact it not phasing you.
