Find common interests, or failing that escalate. Everyone loves talking about themselves.

The key is escalating though - even a boring conversation can be exciting if your conversation partner is rubbing your legs under the table. Just have to calibrate it to be exciting but not too much for the situation.

If you're having a hard time keeping conversation going, just ask them about themselves. People love to talk about themselves, and it helps open doors to better topics/conversations.

And listen/observe. The easiest way to get better at conversational skills is actually to listen and observe, because it helps you pick up on social cues (for instance, you might say/bring up something the other person is very interested in and their reaction/face/posture will give it away even if they don't)
